Named after the legendary imaginary golden land sought by explorers, ‘EL DORADO’ holds a deeper significance.
Just as those adventurers embarked on a quest to discover ‘EL DORADO’, this space beckons you on a journey of its own.
Dominating the entrance is a towering golden façade statue, reminiscent of the mythical treasure.
The presence of a water pool pays to ‘Dancing Water’, a creation by Uchida Shigeru.
These two symbols artfully symbolize the intersection of Aldo Rossi’s and Shigeru Uchida’s legacies.
Within ‘EL DORADO’, from buffet-style breakfasts to dinners, we extend an invitation to overnight guests to relish the culinary presentations freely.
Consider this space a haven, a living room beyond the guest quarters, where relaxation is paramount.

A one-night-only improvisational French course

A French full-course dinner composed each night through the chef’s inspiration and refined technique, using the finest seasonal ingredients of the day.
There is no fixed menu—each dish is thoughtfully crafted based on the condition and character of the
ingredients at their peak. What emerges is a one-night-only culinary experience, never to be repeated in the same way.
From flavor and aroma to the visual presentation, every element is meticulously designed to engage
the senses and leave a lasting impression. Each plate reflects the sincere craftsmanship of Chef Tomio Sasao.
The dinner is available not only to hotel guests but also by reservation for outside diners. We kindly ask gentlemen to wear a jacket.



Tomio Sasao: Culinary
Advisor at HOTEL IL PALAZZO

Tomio Sasao built his foundation in French cuisine through years of experience at acclaimed restaurants across Japan.
After serving as head chef at Isshin in Minami-Aoyama, he went on to open his own restaurant, SASAO.
He has since overseen the culinary direction and operations of multiple establishments.

Currently serving as Culinary Advisor at HOTEL IL PALAZZO, he supervises the all-day dining program while also crafting the structure and execution of the evening course menu.
His culinary style defies convention, shaped by years of experience and a refined personal sensibility.
With the theme of “a refreshing impression that lingers after the joy,” he creates dishes that bring out the full character of each ingredient.
