A collaboration between HOTEL IL PALAZZO, a design hotel located in Haruyoshi, Fukuoka, and Chocolate Shop, a long-established patisserie founded in 1942, has given rise to an original chocolate collection.
Blending the architectural legacy of HOTEL IL PALAZZO with the refined sensibilities born from its Re-Design project, this seasonal chocolate box was created under the theme: “A story of chocolate where tradition meets innovation, designed to awaken all five senses.”
Chocolat IL PALAZZO 2025 Summer, available for a limited time, features four unique pieces: Matcha, Citrus Sansho, Sweet Corn, and Tea. Each one offers not just flavor, but also aroma, texture, appearance, and finish—crafted to deliver a multisensory experience in every bite.
Matcha
A two-layered creation featuring Yame matcha.
The top layer is a lightly caramelized matcha caramel that enhances the tea’s depth.
The bottom layer is a refreshing ganache made with summer fruits like banana and
passionfruit, blended with early-harvest green tea.
Citrus Sansho
Milk chocolate infused with the bright aroma of citrus peel, combined with the crunch of nuts and a popping texture that bursts after a delay.
A subtle note of Japanese sansho pepper adds a stimulating finish, evoking the fleeting
sparkle of fireworks in a summer night sky.
Sweet Corn
A playful yet nostalgic piece made with white chocolate layered with the gentle sweetness of corn.
Hints of roasted caramel, browned butter, and French sea salt (Fleur de Sel de Guérande)
bring depth, reminiscent of lively summer festivals.
Tea
A refined milk chocolate with the elegant aroma of black tea and the sweet acidity of
orange. Accented with Chocolate Shop’s house-made honey, this piece delivers a cool and layered
taste, perfect for warm summer days.
